For those who don't know what Fondant is, here’s what exactly is Fondant. It is a thick paste/icing made up of powdered sugar and water and is used in decorating desserts and sweets. It is pliable and can be beaten and kneaded. You can call it edible playdough that you always wanted as a kid because Fondant can be rolled, colored, printed, flavored and cut and transformed into any shape. You know one more advantage of homemade Fondant is that it is softer than the readymade one and easy to work with.
Now that I have explained to you what is Fondant, lets head towards the fondant recipe. It is an easy recipe even if you are new to decorating cakes.
1 tablespoon unflavored gelatin
1 teaspoon vanilla extract (clear)
1/4 cup cold water
1/2 cup white corn syrup
1 1/2 tablespoons glycerine
4 cups sifted confectioner's sugar + extra for rolling
3 cups buttercream frosting for cake decoration
This Fondant is prepared without a microwave.
Take a small saucepan and add water and gelatine to it. Stir well until it softens. It will take approximately 5 minutes.
Heat and stir the gelatin (and water) until it dissolves and becomes clear.
Switch off the external heat source and add corn syrup and glycerine. Stir well. Let it cool down a bit.
Its time to add vanilla extract.
Now take a large glass bowl and carefully shift the sugar in it. Try creating a well-like structure in the center (you will need it).
Pour gelatin into that well you created. Blend the sugar well. Knead it until the mixture becomes stiff but pliable and stops sticking to your hands. Tip: If the dough is sticky, add some amount of confectioner's sugar.
Convert the mixture into a big ball and cover it tightly in plastic wrap.
Place the covered ball in an airtight container and wait for 8 hours. (do not refrigerate if you want ready to use).
Start by covering the cake with buttercream frosting.
Take that fondant ball (knead it to make it soft if required) and roll it flat.
Add confectioners sugar if you find it sticky. Sprinkle it on the counter, rolling pin, butter paper almost on everything that will come in contact with the Fondant to keep it from sticking, just like dry flour.
Roll a flat sheet of Fondant according to the size of the cake. Keep checking that the Fondant is not sticking to the surface and keep adding confectioner sugar id required.
Now lift that fondant sheet and carefully place it on the cake.
Now, starting from the center, gently start shaping the Fondant with a cake smoother decorator and move outwards and downwards. Go on, smoothening the whole cake.
Diffuse the air bubbles( if any) with a pin and smooth that area again. Trim off the excess fondant with a knife.
Go ahead now, decorate the cake.
The quantities mentioned above will prepare a fondant to cover a 9 inches cake.
Once you learn how to make a perfect fondant for a cake, its time to learn how to add color to your fondant recipe. A range of colors is available in paste and liquid form. I would suggest you prefer the paste form over the liquid color. The reason is that the paste colors will not dilute when used on white Fondant. You can use the colors as they are, or can mix and make customizes shades. You can add color while even while preparing a fondant. Oh, and yes, do not forget to wear gloves to protect your hands from discoloring.
